Garlic Scape Pesto



With tons of garlic planted at the farm, there was an abundance of garlic scapes. Though adding them to the compost pile keeps the nutrients on the farm, I was lucky to take some home to make into a lovely pesto. Also great used to flavour stews and added to nearly any vegetable dish, the scapes blended into a wonderful garlic-flavoured pesto that would make an awesome pizza sauce, and was absolutely delicious on our backyard fire-roasted hot dogs!

 Ingredients:
1 cup garlic scapes (about 8-9 scapes), flowery parts removed and cut into 1/4 inch pieces
1/3 cup walnuts
3/4 cup olive oil
1/2 cup parmesan
1/4 cup lemon juice
salt and pepper to taste

 Directions:
Blend the scapes and walnuts in a food processor. While running, slowly add the oil and continue to blend until smooth. Remove into a mixing bowl and add the parmesan, lemon juice, salt and pepper. Use fresh, freeze or store in an air-tight container for up to one week.
