Rhubarb Crisp


Mom has a progressive dinner tomorrow and she is responsible for dessert. I offered to make this rhubarb crisp for her. Rhubarb is in season and so it is the perfect time to use it in desserts. Crisps are so simple to make all you need to do is toss your choice of fruit with some sugar, flour and spice if you like and finish it with a topping of flour,sugar,oats and butter. I like to top mine off with slivered almonds too. They add a nice nutty flavour and are a pretty finish.

Ingredients:

6 cups of diced rhubarb ( enough to fill an 8 inch baking dish )
3/4 cups sugar
1/4 cup flour
1/2 t cinnamon

Topping:

1 cup rolled oats
3/4 cup flour
3/4 cups brown sugar
1/2 cup melted butter
1/2 cup slivered almonds

In a large bowl toss together the rhubarb, sugar, flour and cinnamon. Transfer to an 8 inch greased square pan.

For the topping toss together the flour, sugar and oats. Drizzle in the butter and mix together well with a fork. sprinkle over the rhubarb mixture. Top with a layer of slivered almonds.

Bake in a 375 degree oven for 30 minutes until golden brown.

Let cool slightly and serve with vanilla ice cream, whipped cream or creamy Greek style yogurt.
