Lobster Salad

As a treat for my birthday I bought some small lobsters for an appetizer and a rack of lamb for the main meal. With the lobster I created this delicious salad that I served in martini style glasses. It was so simple and tasty.

Ingredients:

3 small cooked lobsters
1 small red onion, diced
1 t of lime zest
juice of 2 limes
1 avocado cut in to bite size pieces
4 green lettuce leaves

1/4 cup mayonnaise
1/2 t Dijon mustard
juice of 1/2 a lemon

Remove all the meat from the lobsters and cut it up into bite size pieces. In a separate bowl add the onion, lime zest and lime juice. Let it stand for 10 minutes while the lime juice softens the onion. Add the lobster meat and the cut avocado. Toss very gently.

Meanwhile combine the mayonnaise, Dijon and lemon juice in a small bowl.

To serve line each martini glass with 1 green leaf lettuce. Add the lobster and avocado salad and top it with a dollop of the lemon mayonnaise.
