Parsnip & Apple Soup

Still trying to use up my last few apples and I just love a hearty rich soup on a cold day. I also love the flavour of Parsnips. This recipe for Parsnip & Apple soup was inspired by the Foodland 2011 calendar. The original recipe called for 2 apples which I found overpowered the taste of the parsnip and made the soup too sweet rather than savoury. The recipe also called to put Brie cheese in it however I instead had the Brie on the side served on a fresh baguette.

Ingredients:

1 T butter
1 Onion chopped
4 cups of Parsnips chopped
1 Apple peeled & quartered
4 cups of Broth ( vegetable or chicken)
Salt & Pepper

In a soup pot, melt the butter over medium heat. Add the onion and cook stirring for 2 minutes or until starting to soften. Add parsnips, apple & broth and bring to a boil. Reduce heat, cover and simmer for 15 minutes or until tender. In a blender or with a hand held puree the soup until smooth. Season with salt & pepper and serve. You can garnish with herbs or chopped red apple or crisped onions.
