Football Sandwiches


Rick has been playing in touch football leagues for over 20 years. During the summer months there is usually a tournament once a month. For the past 5 years or so I have been making sandwiches for the boys for their weekend. I buy two bite ciabatta buns at Costco and fill half of them with roast beef/arugula and horseradish mayonnaise and the other half with Italian style ham, provolone cheese and a dijonnaise style spread. I buy store cooked roast beef rather than packaged this way you can get it medium rare and there are no preservatives. It is more expensive but well worth it. A bag of buns from Costco has a total of 38 buns so I make 16 of each kind of sandwich, wrap them individually and then pack them in the cooler. This makes it easy for the boys to grab one on the go during their games.

Mostly I make these for large events but you could easily quarter the ingredients and make only a few sandwiches at a time.



Roast beef / Arugula:


16 buns sliced open
16 slices of roast beef
one package of arugula
1/2 cup of mayonnaise
3 T horseradish
Salt

Mix the mayonnaise and the horseradish and set aside. Spread the buns out and put enough arugula on each to cover the bottoms. Add the roast beef and sprinkle lightly with salt then top each with 2 teaspoons of the mayonnaise mix. Once again add enough arugula to cover the tops and then close the sandwiches and wrap.

Italian Ham & Provolone

16 buns sliced open
16 slices of Italian Ham
8 slices of provolone cut in half
1/2 cup mayonnaise
3 T dijon mustard

Mix mayonnaise and mustard and set aside. Spread the buns out and dollop 2 teaspoons of the mayonnaise mix on each bun. Add the the Italian ham, top with 1/2 slice of provolone, close and wrap.
