Jumbalota



This is Grandma Bice's recipe. She often made this cake as dessert for our Sunday dinners. It is also a great cake to serve with tea or coffee at breakfast. It can be made as an orange cake by adding orange zest, lemon cake by adding lemon zest or plain white cake. Also you can add lemon pudding mix or vanilla pudding mix. Be creative!



Jumbalota

Preheat oven to 350 and grease a bundt pan.

4 eggs
1 c sugar
1 c vegetable oil
1 c milk
1 t vanilla
1 1/2 c flour
1 pkg pudding mix
4 t baking powder
Zest of 2 oranges or lemons

With an electric mixer combine eggs, sugar, oil, milk and vanilla. Combine flour, pudding mix, baking powder and zest and then stir into the wet ingredients. Do not over mix. Pour into the bundt pan and bake for 35 minutes or until a tooth pick comes out clean. I like to sprinkle with icing sugar and serve with fresh whipped cream and fresh berries.
